Turkey Tostada
(Something different for left-over turkey)
4 whole wheat four tortillas (6")
1 cup shredded, cooked turkey
1/2 cup salsa
1/2 cup mozzarella cheese
6 Tbsp low-fat plain yogurt
2 Tbsp chopped cilantro
Preheat oven to 350 degrees. Place tortillas on baking sheet and heat 7 minutes until crisp. Set aside.
Combine turkey and salsa in microwaveable bowl. Microwave on high until warmed through (about 3 minutes). Divide turkey-salsa mixture among tortillas and sprinkle each with 2 Tbsp of cheese. Top each tostada with 11/2 Tbsp of yogurt and 1/2 Tbsp of cilantro.

Cranberry-Orange Relish
(not you average Cranberry Sauce)
1 Small unpeeled navel orage, cut into chunks
1 Cup pitted dried dates
1 large unpeeled Granny Smith apple, cored and cut into chunks
1 package (12 oz) fresh or thawed frozen cranberries
1/2 cup honey
Orange zest strips to garnish
Process orange in food precessor until finely chopped. Add dates & apple and coarsely chop. Add Cranberries and coarsely chop.
Transfer to medium bowl and fold in honey.
You can store in airtight container and refrigerate. Garnish w/orange zest.
